Tomato and Egg Stir-fry with a Twist

Like most Hongkongers, I am keenly familiar with the tomato and egg stir-fry. It’s a simple, cheap, and healthy dish that I have grown up eating. I never gave this humble dish much thought until my American partner Asher exclaimed how much he enjoyed this combination. Before meeting me, he had never had this dish. 

I had some Chinese sausages in my fridge one night, and I decided to add that to my tomato and egg. The flavor and saltiness from the sausages elevated the dish even more.

This dish is popular among Hongkongers both locally and abroad, partly because of how easy it is to locate all the ingredients. It also only takes no time at all to make! 

Main Ingredients

  • 3 eggs

  • 3 small tomatoes, diced

  • 2 Chinese sausages

  • Salt, to taste

  • Pepper, to taste

  • ¼ tsp oil

  • ½  tsp sugar 

  • 1 stalk scallion

Method

  1. Cut the Chinese sausages into thin slices.

  2. Dice the tomatoes, making sure to remove the stem in the middle. 

  3. Whisk the eggs in a bowl, adding a pinch of salt and pepper. 

  4. In a pan, hit up a little oil. Once the pan is warm, put in the sausages. Under medium to high heat, fry until the surfaces start to blister, about 3 minutes. Set the sausages aside in a separate bowl.

  5. The sausages should have released a good amount of oil in the pan. If that’s the case, no need to add extra oil. Put in the diced tomatoes. Add a pinch of salt and cook for about 2 minutes. 

  6. Once some liquid from the tomatoes has been cooked out, add the whisked eggs. Stirring occasionally with a pair of chopsticks. 

  7. Before the eggs are fully cooked, pour in the Chinese sausages. 

  8. Add salt and pepper to taste. 

  9. Serve immediately. 

Feel free to adapt this recipe in whatever ways you want. For instance, you may choose to add more eggs or more tomatoes, or you may add your own secret ingredient the way I did!
